After diagnosis with a serious medical condition, I was convinced that I needed to change my way of eating in order to improve my health. In the process of doing blood testing to determine the seriousness of my illness, it was uncovered that I was allergic to dairy products and eggs.
This discovery, although upsetting, was not really a surprise. This actually explained the years of chronic sinus congestion and migraine headaches I had been experiencing. When I eliminated the dairy products and eggs, my nasal congestion disappeared. And, the majority of my migraines just stopped occurring.
I couldn’t believe that I could go all of those years with fairly serious side effects and never tie them together with dairy products.
I have always been a great lover of cheese. Hard cheeses, soft cheeses, strong cheeses – I loved them all. But, they had to go. My health was too important to me. I was skeptical but hoped that there must be a good vegan substitute for cheese that was easy to prepare and would satisfy my need for cheese. To my delight, I found several great options.
Through some great raw cookbooks (such as “Raw Food, Real World” by Matthew Kenney and Sarma Melngailis and “Living Raw Food” by Sarma Melngailis) and my favorite recipe resource, Google, I was able to add some “cheesy” staples to my diet that were actually healthy foods.
I found that I could be eating healthy while still getting my fix for cheese. Raw cheeses (delicious raw cashew and macadamia cheeses can be found at Dr. Cow in New York) and some vegan recipes that I can make right at home are healthy foods that I could make right at home.
I will never miss cheese again. I feel better than ever since I ditched the dairy and lost weight in the process. My need for cheese has been resolved and my health condition is under control. All of this success is a result of eating healthy. There is no looking back. There is too much at stake.
